Upper and Lower Dough Brushes

The Upper and Lower Dough Brushes are a paired brushing system that removes excess flour from the top and underside of a dough sheet before cutting or baking. Farhat configures the machine around the product, so dough condition, geometry, upstream flow and the next process are defined before the final model is released.

Crafted Baked Goods With Upper and Lower Dough Brushes

The machine’s role is specific: it is a paired brushing system that removes excess flour from the top and underside of a dough sheet before cutting or baking. Its value comes from making one critical operation repeatable while protecting the product for the next stage. Farhat engineers the product-contact path, drive arrangement, sensing, settings and transfer geometry as one system.

How It Works

  1. The sheet enters beneath two mobile upper helical brushes.
  2. Upper brushes sweep loose flour toward the collection area.
  3. A full-width lower brush cleans the underside through the supporting conveyor path.
  4. The sheet exits with reduced loose surface flour for the next process.

Engineering Features

  • Top-and-bottom treatment: Separate F29 and F30 modules address both dough surfaces.
  • Helical brush pattern: The upper arrangement moves material laterally rather than pressing it into the sheet.
  • Height adjustment: Brush engagement is set to clean without marking dough.
  • Food-contact brush material: The reference specifies Nylon 6.12.
  • Stainless structure: The documented frames use SS304.

Products and Applications

The upper and lower dough brushes can be considered for pizza and flatbread sheets, cracker and breadstick dough, lavash lines, and continuous sheeting systems using flour dusting. Compatibility is confirmed with the intended dough or finished product.

Integration In An Automatic Bakery Line

Both brush modules sit inside the continuous sheeting line between lamination and cutting. Brush height, rotation and flour-collection must be matched to dough tack and the dusting-flour load so the sheet is cleaned without being marked or stretched. The controls scope should define permissives, blocked-product detection, upstream stop logic, downstream-ready signals, emergency-stop zones and restart behavior.

Frequently Asked Questions About Upper and Lower Dough Brushes

They are a paired brushing system that removes excess flour from the top and underside of a dough sheet before cutting or baking. Farhat supplies them as configured modules or an integrated part of a bakery production line.

Typical applications include pizza and flatbread sheets, cracker and breadstick dough, lavash lines, and continuous sheeting systems using flour dusting. Final compatibility depends on the recipe and product state, so representative trials are recommended.

Brush height, rotation and flour-collection are matched to dough tack and the dusting-flour load so the sheet is cleaned without being marked or stretched before the next process.

Yes, when a site survey or verified drawings establish the infeed and discharge elevations, available footprint, product flow, utilities and controls interface. Retrofit scope may include transition conveyors, guarding and software interlocks.
